Another HN frontpage piece blabbering about multicultural cuisine.
1.People eating at X restaurant don't suddenly start respecting X. An example: Mexican restaraunts in the article.
2.most ethnic food is incredibly unhealthy:
Tons of sugar, carbs, fried/baked products , extreme spiciness or saltiness.
3.The status of ethnic food is more of a cultural fetish: most "ethnic restaurant" foods are NOT the usual cuisine in the country in question and would be rare even in the past.
Most of such foods are constructed by local chefs: the article describes an exception.
