Are Russians (and Bulgarians and whoever) a race like Jews, or just an ethnicity like Chinese? I'm not a racialist or anything, just trying to get my head around these things...

Actually, several of them, since there is no such ethnicity as "Russian" - it was made up in the times of the Russian Empire in order to facilitate solidarity among the populace. The contemporary "Russians" comprise various Slavic, Finno-Ugoric, Mongolian-Tataric, Caucasian and other ethnicities.

Finno-Ugorics also live in Northern Europe (Finland) and non-neighboring Eastern Europe (Hungary).
Mongolians also live in Mongolia, Tatars are closely related to Turks who live in Turkey, Germany and on Cyprus.
Caucasians also live in South-Caucasian countries (Georgia, Armenia, Azerbaijan).
