First you justify gender by saying it gives you an idea most of the time (and you acknowledge there are non-negligible exceptions), then you use the exact same argument against using racial pronouns/qualifiers/slurs.

That's exactly my point. It makes sense to use gendered pronouns, but it doesn't make much sense to use racial pronouns. While the correlation between biological gender and daily life is strong, it's very hard to tell what a hair/skin color says about you.

You could go from American white to Indian shitskin if you used the right tools (sunlight and appropriate tanning), but most people don't go from assembling engines to having a cunt in a few days.
